German Pancackes


Who doesn't love breakfast for dinner?  On occassion we would have breakfast for dinner growing up and a favorite choice was German Pancackes.  Mom got the recipe when she was in college from an Elementry Education Professor.  It was another recipe that was simple and easy for us to help with.  Our favorite part as kids (and still today) was seeing the ultra puffed edges as it came out of the oven.  It was always a treat to get one of the coveted corner pieces because there was extra air and crisp in them.

German Pancakes:

½ cup butter
1 cup milk      
6 eggs
¼ teaspoon salt
1 cup flour

Preheat oven to 425degrees. 
Put butter in 9x13 pan. Place pan in oven and turn heat to 425 degrees.  Mix milk, eggs, and salt in blender.  Add flour just enough to blend.  When butter is melted pour in batter.  Bake 20 minutes.  Serve immediately.

  1. It is so interesting that I had never heard of it before I was a senior in college. My elementary ed professor invited our class to her house for brunch and served German Pancakes. She told us how easy it was to make so I just memorized the recipe as she spoke. Dad had never had it until I made it for him.
